What you will need:
For the Cake
2 bags of Marshmallows
4 eggs
2/3 cup caster sugar
1 tsp vanilla essence
1 cup self raising flour
150 ml whipped cream
Icing
2 cups icing sugar
4 tablespoons butter
1 teaspoon vanilla essence
2 teaspoons water
Steps:
Preheat oven 180C
Line two baking tins with baking paper and lightly grease.
Beat the eggs for 5 minutes until they have increased in volume. Add the
caster sugar and vanilla essences. Sift the flour and fold into the egg
mixture using a wooden spoon until mixed through.
Evenly divide the mixture into the two cake tins. Place tins in oven and
cook for 20 min or until cakes spring back when touched.
Allow to cool, remove from tins and peel off the baking paper.
Whip the cream until thick.
When the sponges have cooled completely add a big dollop of cream to one of
the cakes and spread evenly. Place the other sponge on top.
Icing
Place butter into the microwave for 15 sec, then whip until silky. Mix the
butter, vanilla essence and sifted icing sugar until it is smooth. Add food
colouring and water, mix well.
Ice the cake, and gently push the marshmallows into place.
Tip: It is best to start from the bottom and work your way up with the
marshmallows.
